. Coconut pasta

. Green chillies (chopped)

. Turmeric powder

. Salt

. Mustard oil

The process:

1.first, marinate the vetki fillets with turmeric powder and salt for about 15-20 minutes.

2.in a mixing bolw, prepar the mustard paste by grinding black mustard seeds with water to a fine paste .

3. Next add the coconut pasta, chopped green chillies, turmeric powder, and salt to the mustard paste and mix well.

4. Take a piece of banana leaf and heat it slightly over a flame to make it pliable.

5. Place a marinated vetki fillet on the banana leaf and spread the mustard- coconut pasta mixture on top of the fish fillet.

6. Fold the banana leaf over the fish to make a parcel. Tie the parcel with a price of staring or secure it with a toothpick.

7. Repeat the process with the remaining fish fillets and banana leaves.

8. Heat a non-stick pan and add mustard oil. Once oil is hot , add the fish parcel and cover the pan with a lid.

9. Cook the fish on medium heat for about 10-12 minutes or until the fish Is cooked through.

10. Serve the vetki paturi hot with steamed rice.

Tips on variations :

. You can use other types of fish such as vetki,hilsa or rohu instead of vetki.

. If you don’t have access to fresh banana leaves, you can use Parchment papers or aluminum foil instead.

. You can adjust the amount of green chillies according to your teste performance.

. For a vegetarian version of paturi, you can use paneer or vegetable like aggplant, pumpkin, or potato.
