step 1 : prepare the peas or chickpeas

  1. Rinse the soked peas or chickpeas under running water to remove any diet or impurities.

2. In a pressure cooker, add the peas or chickpeas and enough water to cover them. Cook for 4-5 whistles or until they are soft and cooked thorough. Alternatively, you can cook them in a pot until tender.

step 2 : Prepare the ghugni base

  1. Heat oil in a pan or a kadai over medium heat.

2. Add the chopped onion and saute until they turn golden brown.

3. Add the ginger-garlic garlic paste and slit green chillies. Saute for a minute antil the raw aroma disappears.

4. Now, add the tomato puree and cook antil the oil starts to separate from the mixture.

5. Add the cumin powder,coriander powder, turmeric powder, red chili powder, and salt . Mix well and cook for anther 2-3 minutes to allow the spices to blend.

step 3 cook the ghugni :

  1. drin the cooked peas or chickpeas and add them to the pan. Mix well,insure that the peas or chickpeas are coated with the spice mixture.

2. Add water as per the desired consistency of the gravy. Simmer the ghugni for about 10-15 minutes to allow the flavor to meld together.

3. Adjust the seasoning if needed.

step 4 : Sarve and garnish

  1. Transfer the ghugni to sarving blows.

2. Garnish with chopped onion, tomatoes, green chillies, and coriander leaves.
