  1. 2 cups basmati rice

2. 500 grams boneless chicken or mutton, cut into pieces

8. 1 tablespoon biryani masala powder

9. 1 tablespoon red chili powder

13. A handful of coriander leaves, chopped

14. 1 cup bamboo shoots, thinly sliced

15. 4 cup water

  1. preparation:

. Wash the basmati rice under runing water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

. Marinated the chicken or mutton pieces with yogurt, ginger-garlic paste,biryani masala powder, red chili powder, turmeric powder, and salt. Allow it to marinated for at last 1 hours.

2. Cooking for bamboo shoots:

. Heat a tablespoon of ghee in a pan and add the sliced onions. Saute until golden brown.

. Add the bamboo shoots and cook for a few minutes until they turn tender.

. Remove from heat and set aside.

3. Cooking the biryani:

. Heat ghee in a large, heavy bottomed pan or a biryani pot. Add the green chillies and the marinated meat. Cook until the meat is browned.

. Add the chopped tomatoes and cook until they turn soft and mushy.

. Add the mint leaves, coriander leaves, and the cooked bamboo shoots. Mix well.

. Add the soked and drined rice to the pan, spreading it evenly over the meat and vegetables mixture.

. Pour water into the pan and seson with salt. The water level should be about 1 inches above the rice.

. Cover the pan with a tight-fitting lid and cook on low heat for about 20-30 minutes or until the rice is fully cooked and tender.
