Introduction:
Ingredients for appam:
. 2 cups of fermented rice butter
. 1/2 cup of grated coconut
. 1 teaspoon of sugar
. 1/2 teaspoon of active dry yeast
. A piece of salt
. Water, as needed
. Coconut oil , for greaing the pan
Ingredients for stew :
. 2 cups of mixed vegetables ( carrots, potatoes ,beans, peas) , diced
. 1 onion, finely chopped
. 2 green chillies, slit
. 1 ince piece of ginger, grated
. 4-5 garlic cloves, minced
. 1 cup of thick coconut milk
. 1 cup of thin coconut milk
. 1 tablespoon of vegetables oil
. 1 tablespoon of mustard seeds
. A few Curry leaves
. Salt,to test
Instructions :
- making appam batter:
a. Take the fermented rice butter in a blow and add grated coconut, sugar, yeast,a piece off salt.
B. Mix well and let it rest for about 4-5 hours, allowing the yest to ferment and the flavor to develop.
c. After fermentation, the batter should have a slightly sour aroma and a buddly texture.
2. Preparing appam:
a.If the batter appears too thick, add water gradually to achieve a pouring consistency
b. Heat and appam pan or a non-stick skillet and lightly grease it with coconut oil.
c. Pour a ladleful or butter into the center of the pan and swril it in a circular motion to spread the batter evenly .
d. Cover the pan and cook on low heat for 2-3 minutes until the edges turn golden brown and the center is cooked.
e. Remove the appam from the pan using a spatula and repeat the process with the remaining batter.
3. Making vegetables staw:
a. Heat oil in a deep pan or pot and add mustard seeds. Once they start splattering, and Curry leaves, chopped onion, green chillies, grated ginger and minced garlic. Saute until the onions turn translucent.
b. Add the diced vegetable to the pan and stir- fry for a few minutes.
c. Pour the thick coconut milk in to the pan, cover it, and let it simmer on medium heat until the vegetables are tender.
d. Stir in the thick coconut milk and seson with salt according to test.
e. Simmer for an additional 2-3 minutes, ensuring the staw is well headed.
