  1. prepare the dough:

. Slowly add water in small quantities and knead the flour until it froms a smooth, pliable dough.

. Drizzle a little oil or ghee on the dough and knead again for a few minutes.

. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

. In a mixing bowl, combine the mashed potato, finally chopped onion, green chillies, grated ginger, red chili powder, cumin powder, coriander powder, turmeric powder, chopped coriander leaves, and salt.
