For the dough:

. 2 cups whole wheat flour

. Water (as needed)

. Salt (to test)

. Ghee or oil (for cooking)

. 4 medium size potatoes, boiled and mashed

. 1 medium size onions, Finley chopped

. 2 green chillies, finally chopped

. 1 teaspoon grated ginger

. 1/2 teaspoon red chili powder

. 1/2 teaspoon coriander powder

. 1/4 teaspoon turmeric powder

. A handful of fresh coriander leaves, finally chopped

. Salt (to test)


  1. prepare the dough:

. In a large mixing bowl, add whole wheat flour and pinch of salt. Mix well.

. Slowly add water in small quantities and knead the flour until it froms a smooth, pliable dough.

. Drizzle a little oil or ghee on the dough and knead again for a few minutes.

. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

2. Prepare the filling:

. In a mixing bowl, combine the mashed potato, finally chopped onion, green chillies, grated ginger, red chili powder, cumin powder, coriander powder, turmeric powder, chopped coriander leaves, and salt.

. Mix all the ingredients together until well combined with. Adjust the seasoning to your teste.

3. Assemble and roll the parathas:

. Divide the dough into small lemon sized balls.

. Take one dough ball and dust it with some flour. Roll it into a small circle, approximately 6-7 inches in diameter.

4. Cook the parathas:

. Heat a tawa or a flat pan on medium heat. Please the rolled paratha on the heated pan .
